Blue Spirulina Overnight Oats

Try this bowl of overnight oats that's a major nutrition punch (it's loaded with antioxidants, protein and fiber!)

Serving: 1

Ingredients:

3/4 c. organic rolled oats
1/2 c. organic frozen blueberries
1/2 tsp. organic blue spirulina (Mine is from here)
1 Tbsp. organic chia seeds
1 Tbsp. organic crunchy peanut butter
1 Tbsp. shredded coconut
1 chopped date (I’d recommend getting these from Trader Joe’s, Joolies, or Terrasoul Superfoods)
1 c. organic oat milk (or any plant milk: organic soy, hemp, macadamia, coconut, rice, etc.)

Directions:

Combine all ingredients and store in a mason jar overnight or at least 2 hours before serving! Should keep in the fridge for up to one week. Enjoy cold or warm. Top with a drizzle of honey or maple syrup and voila, ready to eat! Cue my best Julia Child voice: “Bon Appetit!”

Nature’s beauty never ceases to amaze me. That pretty blue hue comes from blue spirulina, an algae (which can be blue or green) which has a protein complex called phycocyanin. Spirulina produces all its nutrients by harvesting sunlight. It gathers and transforms sunlight into green and blue pigments that make it a blue-green algae. Spirulina is a balanced, natural, whole food. Its minerals and vitamins are naturally bio-chelated, meaning they’re wrapped in amino acids for excellent assimilation by the body. It contains over 100 synergistic nutrients and is nature’s richest and most complete source of total organic nutrition. It’s rich in gamma linolenic acid (GLA), which is an essential fatty acid that’s helpful in lowering blood pressure and blood cholesterol. Spirulina also eases conditions such as PMS pain and eczema. Additionally, it’s a powerful immune system builder and helps improve gastrointestinal and digestive health by increasing the production of Lactobacilli—one of many beneficial gut bacteria strains.
