Easy Vegan Pesto Pasta
This is one of my favorite comfort meals (well, pasta in general!) and it’s also SO easy to throw together! This would be perfect for busy moms because it comes together really quickly and is a crowd pleaser.
Here’s what I used:
-@traderjoes vegan kale, cashew + basil pesto
-organic sautéed cherry tomatoes
-Organic whole wheat penne
-Organic sourdough with @miyokoscreamery butter and @happyday_farmhaus garlic powder
Cook pasta according to instructions on the package. While this is cooking, saute cherry tomatoes over low-to-medium heat in 1 TBSP of EVOO (you can also add in some freshly chopped garlic) for about 5-7 minutes. Once pasta is done cooking, drain and place back in pot. Add desired amount of Trader Joe’s vegan pesto and toss well. Next add in cherry tomatoes and toss again. I added some garlic bread on the side with Miyokos Creamy vegan butter and local garlic powder from our CSA, Happy Day Farm Haus. I placed this in the oven until it was slightly browned.
