I have not always loved avocados, and I still find that if I overdo it on the avocado, I get a stomach ache! In large part, it’s due to the high fat (but healthy fats: monounsaturated fatty acids!) content. So, I usually have one REALLY special piece of toast. Cue, my elevated avo toast…

With it being Spring, radishes are plentiful and in-season. I grabbed a bag of multi-color organic radishes from Trader Joe’s. I’m really enjoy chopping them thinly and putting on just about everything from english muffins, to salads to avo toast! Here’s how you can recreate this toast in your own kitchen. Have fun elevating the ordinary.

Method:

To make guac you’ll need:

2 ripe organic avocados

2 organic garlic cloves

2 organic limes

Pinch of sea salt

Directions: Put all guac ingredients in a bowl and mash together with a fork.

(Serving Size Note: This amount of guac makes enough for roughly 4 medium sized pieces of toast)


Toppings/Bread:

Sourdough: I love an organic sourdough, toasted! But choose whatever bread you enjoy. Although, I will say, who doesn’t love sourdough?! It’s fermented, making it easier to digest!

1-2 medium radishes, FINELY sliced

Sprinkle of minced onion seasoning

Sprinkle of Sea salt

1 Tbsp. freshly chopped chives

Directions: Spoon a generous layer of guac onto 1-2 pieces of sourdough. Then top with radishes, minced onion, sea salt and chives.


Ingredient Spotlight:

Avocado: Did you know avocados are also called alligator pears? Yes indeed. As I mentioned above, avocados are high in monounsaturated fatty acids, aka healthy fats! One avocado is equivalent to the amount of potassium in 2-3 bananas! That’s called efficiency, people. Additionally, the oils in avocados (both oleic and linoleic acids) may help lower cholesterol and are sodium-free. As if that weren’t enough to convince you to eat these little green gems, then i’ll leave you with this: avocados have phytochemicals (aka plant chemicals) that help to fight cancer AND heart disease.

Limes: Oh how I love a good lime. Limes are an incredible way to boost the flavor of most dishes. Squeeze half of one lime over your quinoa, rice, tacos (obviously!), avocados, etc.—the flavor will P-O-P! Now, why are they nutritionally good for us? Well, they’re similar to lemons in that they’re a great source of vitamin C. They also contain the important phytochemical limonene, which has anticancer properties!
