Pumpkin Almond Balls
I love a good energy ball or bite! These are for all my pumpkin lovers! They have all the quintessential autumnal flavors. Here’s how to make them:
Serving: roughly 8-10 depending on how big you make them—I use a small cookie scoop.
Ingredients:
1 c pitted medjool dates
3/4 c. almonds
1/4 c. pumpkin puree
1/4 c. shredded unsweetened coconut flakes
1 tsp, vanilla extract
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. cloves
pinch sea salt
1/3 c. dark chocolate chops (I like these)
Directions:
Place dates and almonds in a food processor and pulse until combined. Then add the rest of the ingredients and pulse until everything is combined. Fold in the chocolate chips before forming into balls. Store in fridge for 1 week or freezer for one or two months. They won’t last long, though!
