Cardamom Cinnamon Goji Berry Bites

 

The other day, I set out to make a new energy ball/bite situation. While I love a classic peanut butter/ almond butter oat and chocolate chip recipe, I wanted to mix it up and give you another option. Cue this new recipe. When I made these, I didn’t measure out exact ingredients, and guess what? Neither do you. That makes this easier to throw them together. Easy. is. the. goal. Warning: Goji berries often need to be purchased online. You can substitute dried raspberries or even unsweetened cranberries (I think dried raspberries would be the better alternative, but that’s just me!).

Ingredients (roughly eyeballed)

3/4 c. organic smooth/drippy peanut butter (I use aldi peanut butter)

1/4 c. organic maple syrup

1 c. organic rolled oats

2 Tbsp. organic dried goji berries

3-4 Tbsp. organic hemp seeds

1 Tbsp. organic chia seeds

1/2 tsp. cinnamon

1/4 tsp. cardamom

DIRECTIONS

Combine wet ingredients in a medium sized bowl. Add dry ingredients to wet ingredients and thoroughly combine. Roll into balls or use a small cookie scoop. I used a small cookie scoop and made 12 balls.

Store in a glass container with parchment paper separating the layers if you don’t like these sticking together. Store in freezer up to 2 months. (I laugh writing that because they won’t last that long, trust meeee!)
