Coconut Bacon "BLT"

 

I cannot stop eating this sandwich and I know you’ll love it too! This sandwich was inspired by a trip my husband and I took to Sanibel Island, FL where there was a hippie dippie vegetarian restaurant called The Sanibel Sprout. Every time we would go to Sanibel, a stop at the Sprout was necessary as was ordering this sandwich. Here’s what you’ll need to do to create your own!

Ingredients:

-Really delicious sourdough bread

-Vegan Mayo (I like Follow Your Heart veganaise)

-Heirloom tomatoes (or whatever type you have on hand)

-Greens (whatever type you have on hand but some type of leafy green is ideal)

-Coconut Bacon

Instructions:

Layer mayo on both sides of the bread, sprinkle one piece of bread with coconut bacon, then layer thinly sliced tomatoes followed by greens. Slice in half. Enjoy!

How to Make Coconut Bacon?!

Ingredients:

1.5 TBSP tamari or coconut aminos

1 TBSP maple syrup

1.5 TBSP liquid smoke

1/2 Tsp. smoked paprika

2 cups unsweetened large-flake coconut

Instructions:

Preheat oven to 325 degrees F.

Whisk together all ingredients until they’re evenly coated. Pour the coconut onto a baking sheet and spread out in a single layer. Bake for 15 minutes, stirring every 5 minutes. Transfer to a large plate to cool whereupon it will become crisp. Store in a mason jar. Sprinkle on salads, pizza, bread, etc.
