Pitaya Powered Smoothie Bowl

This smoothie bowl will transport you somewhere exotic. Cue your dream vacation in Bali. Or Hawaii. Wherever it is for you, this may induce some wanderlust. That vibrant pink hue is from the main ingredient in this bowl: pitaya! Also known as dragon fruit.

Dragon fruit is rich in antioxidants, vitamin C (hello immune boost!) and has loads of fiber, helping to feed your gut bugs and keep you full.

Try this recipe and have fun topping your bowl with your favorite accoutrements!

Ingredients:
2 packs of frozen dragon fruit (I use the Pitaya Foods brand)
1 medium organic banana (plus more for topping)
1 tbsp. organic peanut butter
1/2 c. frozen strawberries

Toppings:
Organic shredded coconut
Hemp seeds, chia seeds or ground flax
1/2 organic banana, finely sliced
Peanut butter drizzled on top
Cacao nibs

Directions: Add ingredients to high speed blender and blend for 1 minute until well combined. Pour into your favorite bowl and add toppings.
